Scrambled Eggs

This recipe is for two servings
Ingredients:
- 4 large eggs
- 1 tablespoon olive or coconut oil
- 1 tablespoon coconut milk or heavy cream
- Salt, pepper and chives to taste
- 4 cups chopped spinach
- ½ cup cheddar cheese (Optional)
Method
- Combine your eggs, double cream/ coconut milk, salt, pepper and chives in a bowl
- In a pan add your oil of choice.
- When the oil is hot add spinach
- Add egg mix to the pan
- Garnish your scrambled eggs with cheese
